How much are payroll taxes and how often must they be paid?

I am used to being a W2 employee. I am now starting a business. If I promise a candidate for a job a certain hourly rate, what fees and taxes must I pay in addition to the hourly rate? I want to get an estimate for my budget purposes.

How often must I pay these fees directly to the government (e.g., Jefferson City and the IRS)?
