I was carjacked and the thieves totalled my car. I was(am) financing the car. The insurance adjuster said the claim check will be sent to the dealership and anything remaining will be sent to me.

The check should be sent to you or if there is a superseding agreement, it should be sent to who is financing you. My rebuttal question is, “Was your car financed through the dealership?”
